Executive chef
Born and raised into an Italian family of restaurants-owners, Chef Gianfranco Schifano has made his passion a profession.
He began his career in Agrigento, Sicily, as a clerk in his parents’ restaurant. In order to perfect his learning, he continues to Verona. It was then in Paris, France that he refined his training with great French chefs when he joined the ranks of three great restaurants: Convivium, Romentica and Bellagio. He continues his adventure in Morocco taking the reins of the restaurant Boccaccio kitchen by leading a team of 10 cooks. Under his orders, the Boccaccio was rewarded on the occasion of the 1st international edition in 2018 of the “70 best restaurants with a pizzeria in the world”.
That’s when he drops his knives in Montreal for new challenges in our restaurant Le Richmond.
Chef Gianfranco is passionate about recreating the scents of Italy, those tastes and traditions that marked his childhood. He takes pleasure in combining them with a contemporary creativity of cuisine that he has discovered during his travels. appetito!
